DES MOINES — Kemin Industries shared two clean label antimicrobial and antioxidant solutions at ShIFT20, the virtual food show and expo hosted by the Institute of Food Technologists July 13-15.
Fortium RVC is a consumer-friendly blend of rosemary extract and ascorbic acid that helps lengthen the shelf life of baking and snack products by delaying the onset of lipid oxidation in fats and oils. It may serve as an alternative to synthetic antioxidants and traditional tocopherols.
Fortium RVC is made using Kemin’s proprietary grinding technology, which ensures uniform particle suspension for improved stability in each application, the company said.
Kemin also shared TillaZyme, part of its recently launched portfolio of solutions for the tortilla industry. The ingredient is a mix of enzymes and gums designed to provide customized characteristics for corn tortillas.
